Dive deep into the heart of DO Cava with us on a night dedicated to celebrating the elegance and diversity of this cherished sparkling wine. As the golden bubbles rise in your glass, you’ll be transported to the vineyards of Cava, exploring its rich heritage and the meticulous craftsmanship that goes into every bottle.

Our journey begins with the Clos La Soleya Brut, a harmonious blend of Macabeu, Xarel·lo, and Parellada. Aged for 12 months, its straw-yellow hue dances with fine bubbles, releasing an intense aroma of citrus, fresh fruit, and white flowers. Its taste is a symphony of balance, creaminess, and freshness, exuding finesse and elegance without losing its youthful charm.

As we delve deeper, the UBAC BRUT GRAN RESERVA 2018 awaits. Originating from hand-harvested vineyards in Valls d’Anoia-Foix, this Cava is a testament to the terroir of Comtats de Barcelona. The late and rainy harvest of 2018 has bestowed upon it notes of white fruit and ripe apple, making it a fresh and agile companion to our culinary delights.

Our final treasure for the evening is the BARRICA GRAN RESERVA 2018 MACABEO FERMENTED IN BARREL. This single variety Cava, made from 100% Macabeo, has been fermented in oak barrels for six months, giving it a unique structure. Its aromas of mature white fruit, baked apple, toasted nuances, and brioche are a testament to its long aging process, promising a creamy and unforgettable experience.

To complement these Cavas, Chef Iñaki has crafted a menu that resonates with the essence of each wine. Begin with a playful Cheese Lollipop Appetizer with Sunflower Seeds, a delightful precursor to the Leeks and Salmon with Chive Oil and Ink. As the evening progresses, indulge in the rich Duck Confit with Pineapple Chutney and Berry Sauce, and conclude with a sweet note of Apple Tartlet.
